Dandelion. Used like spinach and gives a
heavy yield of greens under good conditions. Dandelion is not extensively
grown in American gardens but seeds of improved and cultivated varieties
may be bought from dealers. These varieties include Common French, French
Broad Leaved, and Arlington Thick Leaved. Sow the seeds 1/2 inch deep
in rows 18 inches apart and thin the plants to a spacing of 8 to 10 inches.
Dandelion is a hardy, cool-climate plant, growing in almost any good garden
soil, but in colder parts of the country should be mulched lightly with
leaves or straw. Blanching by, covering with paper or by boards leaning
together in an inverted V tenderises the leaves and improves the flavour.
